Since I am on a new journey to restore my health with what seems like an impossible diet I figured I would document it as best I could and share it right here on my piece of the internet. Every Monday I will post a new recipe that I have come up with as several people have asked me to post any recipes I love. I usually find recipes that sound good to me and then tweak them to work for my dietary needs. So, it is truly a trial and error journey.
Last week I made these really great meatballs in hopes of having an easy little snack for the entire week. With this new diet, I had to make sure my meatballs fit the Autoimmune Protocol which is basically a stricter version of the paleo diet. This means that these meatballs have no dairy, grains, eggs or tomatoes. Disclaimer: I do eat eggs at breakfast but avoid them in anything else.
These meatballs held together great without any bread, cheese or egg to bind it but you can of course add them in if your diet allows.
1 lb ground turkey
1 lb ground bison
1 medium yellow onion, chopped
2 cloves fresh garlic, minced
1 ¼ Tbsp of Basil, Oregano, Parsley. I did equal parts of each but break it up however you like.
¼ tsp salt
¼ tsp pepper
Preheat oven to 400F.
With hands, mix meat and all other ingredients together until well mixed.
Form meat into 1-1/2” meatballs and place on baking sheet with parchment paper.
Bake for 10-15 minutes.
Sorry for the low-quality photos, one is a screenshot from a video and the others were after thoughts. I didn’t think to document the process until I was about over but the taste and ease of this recipe should make up for that. I will do better with my planning for photos next week 🙂 I ate them plain and then throughout the week as a protein on my salads.
